    • Yogurt--I recommend using a thick Greek-style or high fat coconut flavored yogurt to create the creamiest parfait and to help to maintain distinct layers as it sits. The juice from the macerated cherries will loosen the yogurt a bit as you eat it. If you prefer a different flavor or coconut isn't available to you, vanilla yogurt is a great substitution.
    • Granola--The recommended chunky chocolate cherry granola pairs wonderfully with the macerated cherries but you can use your favorite homemade or store-bought granola. If it's a chunky-style granola, break it into small pieces before adding to the parfait jars.

    Yes, definitely. Strawberries, raspberries, diced peaches, plums, or nectarines would all work well. You can even skip the fruit and layer with spoonfuls of huckleberry sauce.

    Can I use frozen fruit?

    You can, but thaw them before adding to the parfait. You can toss the frozen fruit with sugar before thawing, but let them thaw completely before layering in the jar.

    Equipment

    • 4 pint-sized jars or individual serving dishes

    Ingredients
      

    • 1 cup cherries pitted and halved
    • 2 tablespoons granulated sugar
    • 2 cups full-fat coconut-flavored yogurt (regular or Greek)
    • 1¼ cups chunky chocolate cherry granola broken into small pieces

    Instructions
     

    • Place the cherries in a medium bowl and sprinkle with the sugar. Toss well to combine and let the cherries sit at room temperature until they release some juices, about 15 minutes.
    • Spoon ¼ cup yogurt into the bottom of each jar or serving dish.
    • Top with ¼ cup granola, followed by another ¼ cup of the cherries and their juices.
    • Sprinkle 1 tablespoon over the top of each parfait. Serve immediately or cover and refrigerate for up to 48 hours.
