These easy make-ahead coconut yogurt parfaits include layers of creamy coconut-flavored yogurt, crunchy granola, and juicy macerated cherries.

Equipment

  • 4 pint-sized jars or individual serving dishes

Ingredients
  

  • 1 cup cherries pitted and halved
  • 2 tablespoons granulated sugar
  • 2 cups full-fat coconut-flavored yogurt (regular or Greek)
  • cups chunky chocolate cherry granola broken into small pieces

Instructions
 

  • Place the cherries in a medium bowl and sprinkle with the sugar. Toss well to combine and let the cherries sit at room temperature until they release some juices, about 15 minutes.
  • Spoon ¼ cup yogurt into the bottom of each jar or serving dish.
  • Top with ¼ cup granola, followed by another ¼ cup of the cherries and their juices.
  • Sprinkle 1 tablespoon over the top of each parfait. Serve immediately or cover and refrigerate for up to 48 hours.

Notes

  • Make it easier--Simplify the recipe by using store-bought granola.
  • Get ahead--Prepare your yogurt parfaits up to 48 hours in advance. Keep refrigerated or store in your cooler until you're ready to serve.
  • Dietary--This recipe is suitable for gluten-free diets.
