    Turkey Cranberry Sliders

    These turkey cranberry sliders are an easy camping lunch, dinner, or snack made with cooked turkey, melted Brie, and cranberry relish. If you're enjoying the great outdoors over Thanksgiving or Christmas, they're a great way to use up your holiday leftovers!

    Not only are these mini sandwiches a great way to use up Thanksgiving or holiday leftovers, they are satisfying, endlessly customizable, and require minimal effort or cleanup. Sounds like a perfect meal to me!

    Why This Recipe is Great for Camping

    • You can prepare them in advance before heading out on your trip.
    • They can be cooked over the campfire and there are no dishes to clean up!
    • They make a great camping snack, lunch, or dinner.

    Ingredients and Substitutions

    Ingredients for turkey cranberry sliders--slider rolls, butter, Brie, turkey, and cranberry relish.
    • Slider rolls--For best results use a soft slider roll, like King's. I prefer the more savory King's butter rolls over the Hawaiian ones, but either will work here. To slice them horizontally, use a serrated knife and gently cut through the entire slab of rolls at once, keeping the knife level and parallel to your surface as you cut. Don't separate the rolls before cutting. They are easiest to assemble as one slab.
    • Turkey--This is an excellent use for your sliced or shredded leftover grilled turkey. You can substitute chicken if you don't have turkey on hand.
    • Brie--I like to trim away some of the rind before slicing, but it's not required. This creamy cheese is excellent with cranberry and turkey, but you can substitute another soft cheese, like Camembert.
    • Cranberry relish--The heat from my homemade spicy cranberry relish plays well against the richness of the cheese, but if you prefer a milder relish, you can use store-bought or swap in cranberry sauce instead.

    How to Make Campfire Turkey Sliders

    1. Place the bottom half of the slider rolls in a foil tray. Top with turkey, sliced Brie, and cranberry relish.
    2. Place the top half of the rolls on top of the relish.

    1. Brush the tops of the rolls with melted butter.
    2. Cover with foil and cook over hot coals until the bottoms of the buns are toasted and the cheese is melted, 20 to 25 minutes.

    FAQs

    Can I make this in advance?

    If you want to get ahead, assemble the sliders and wrap them with foil up to 1 day before cooking. Store them in your cooler or fridge until you're ready to cook.

    What should I serve with these?

    They make a great snack all on their own, but if you want to enjoy them as a meal, add in some potato chips for an easy camping lunch, or serve it with camping pasta salad or marinated vegetable salad to make a more substantial dinner.

    Can I make these in the oven?

    Yes. Assemble them as directed, then slide the covered foil pan (or you can use a baking dish) into a 350°F oven and heat until the cheese is melted and everything is hot, 15 to 20 minutes.

    Tips and Troubleshooting

    • Use hot coals or low flame when heating your turkey sliders. A very hot fire or high flames can cause the bottoms of the buns to burn.
    • Very cool or windy weather may result in a longer cooking time.
    • Rotate your pan on the fire every 5 minutes or so to help them heat evenly.

    Turkey Cranberry Sliders

    Equipment

    • Disposable foil tray (8-by-12-inches or 9-by-13-inches)

    Ingredients
      

    • Cooking spray
    • 1 package slider rolls, such as King's sliced horizontally
    • 2 cups shredded or sliced cooked turkey
    • 1 small wheel Brie (6 oz) thinly sliced
    • ½ cup cranberry relish
    • 1 tablespoon butter melted

    Instructions
     

    • Prepare a campfire and let it burn down to hot coals or low flame.
    • Coat the bottom of a disposable foil pan with cooking spray.
    • Place the bottom half of the rolls in the pan. Top with turkey, then arrange the sliced Brie in a single layer on top of the turkey. Spread the cranberry relish over the Brie.
    • Place the top half of the rolls on top and brush with melted butter.
    • Cover the pan tightly with foil.
    • Cook over hot coal, rotating occasionally, until the bottoms of the buns are toasted, the cheese is melted, and everything is warm, 20 to 25 minutes.
    • Use a spatula or knife to cut between the rolls to create individual sliders. Serve warm.
