    Turkey Quesadilla

    This cheesy turkey quesadilla is laden with roast turkey, two types of cheese (yes, two!), and cranberry relish or sauce. It's so good that you're going to want to make sure you save some leftover Thanksgiving turkey just so that you can make this handheld meal.

    There's a lot that you can do with leftover Thanksgiving turkey, from turkey sandwiches to pot pie, but I love this easy turkey quesadilla recipe most for a couple of reasons. It makes use of multiple leftovers, and doesn't require the commitment or effort that a large casserole would. It's also incredibly easy to make, but is a nice change from the rut of a traditional leftover turkey sandwich.

    Ingredients and Substitutions

    Ingredients for turkey quesadilla--tortilla, provolone, turkey, brie, cranberry relish, and Dijon.
    • Tortilla--Use your favorite brand of large flour tortillas. Feel free to use whole wheat or white.
    • Turkey--Shredded or sliced turkey will work here, and if you don't have turkey on hand, chicken will also stand in nicely.
    • Provolone cheese--Shredded provolone will be easier to distribute on your tortilla, but if you can only get sliced provolone, use one slice and break it into a few pieces.
    • Brie--This adds a rich, creamy element to your quesadilla. Feel free to substitute another creamy soft cheese, like Camembert.
    • Cranberry relish--I like cranberry relish, and that's what I always serve at Thanksgiving, but feel free to use your own cranberry sauce, or the canned variety. It adds a sweet-tart flavor that balances the richness of the cheese and the bite of the mustard.

    How to Make Turkey Quesadillas

    1. Spread 2 teaspoons Dijon mustard over half a tortilla.
    2. Top the mustard with provolone and shredded turkey.

    1. Place thin slices or pieces of Brie on top of the turkey. Spread cranberry relish over the other half of the tortilla. Fold in half.
    2. Cook over medium heat, flipping once, until both sides are golden brown and the cheese is melted.

    Do I need to grease my skillet?

    Nope. The tortilla won't stick to your skillet.

    Can I make this on my Blackstone griddle?

    Definitely. Using a large griddle is a great way to make multiple quesadillas at once.

    Tips and Troubleshooting

    • Scale the recipe to make as many or as few quesadillas as you want. You can fit two into a cast iron skillet, or use a large griddle to cook more than two at once.
    • I recommend layering cheese on either side of the turkey mixture in the quesadilla. This will help to glue the whole thing together.
    • A pizza cutter works well for slicing your quesadilla into even triangles.

    Ingredients
      

    • 2 teaspoons Dijon mustard
    • 1 large flour tortilla
    • 1 ounce provolone cheese shredded
    • ½ cup shredded or sliced roast turkey
    • 1 ounce Brie cheese cut into slices
    • 1 tablespoon cranberry relish or sauce plus more for dipping

    Instructions
     

    • Spread 2 teaspoons of Dijon mustard over half of the tortilla.
    • Sprinkle the provolone over the mustard and top with the turkey.
    • Place the slices of Brie in an even layer over the turkey.
    • Spread the cranberry relish or sauce on the other half of the tortilla. Fold it in half to close.
    • Place the folded tortilla in a large cast iron skillet and cook over medium heat, flipping once, until both sides are golden brown and the cheese is melted, about 5 minutes per side.
    • Cut into wedges and serve with extra cranberry sauce for dipping, if desired.

    Notes

    • Scaling--Scale the recipe to make as many or as few quesadillas as you want. You can fit two into a cast iron skillet, or use a large griddle to cook more than two at once.
    • Help it stick--I recommend layering cheese on either side of the turkey mixture in the quesadilla. This will help to glue the whole thing together.
