    These rich and cheesy English muffin grilled cheese sandwiches are an easy camping (or anytime) lunch. They're made with crispy toasted English muffins and two types of cheese and are ready in just 15 minutes.

    Ingredients for English muffin grilled cheese--cheddar, English muffins, Monterey Jack cheese, and mayo.
    • English muffins--Use your favorite type of English muffins here. I prefer either sourdough or extra-crispy, but plain or whole wheat will also work well.
    • Mayo--This gives you an extra crispy, golden-brown exterior on your sandwich. If you want to keep the meal egg-free, you can use butter, but you will need to watch the sandwich closely so that it doesn't burn. Don't substitute low-fat mayonnaise, as it can cause the sandwich to be soggy.
    • Cheese--For best flavor, use a couple types of cheese. I like the combination of Cheddar and Jack, but any good shredding cheese will work. Don't use preshredded cheese as it doesn't melt well.

    How to Make Grilled Cheese on a English Muffin

    1. Split the English muffins in half and spread the outside of each muffin with mayo.
    2. Divide the cheddar and Monterey Jack between two buns, then top with the top half of the buns.
    3. Toast on a griddle or in a skillet over medium-low heat until the buns are toasted and the cheese is melted.

    Why do you use mayo instead of butter on the grilled cheese?

    Because mayonnaise is made with oil, it has a higher smoke point than butter, which allows you to achieve a golden toasted exterior on your sandwich without burning it.

    Tips and Troubleshooting

    • The secret to perfectly toasted and melted grilled cheese sandwiches is to cook over medium-low heat. If you cook over a higher heat, the English muffin will burn before the cheese fully melts.
    • Let your sandwich sit for a minute before slicing it. They are quite hot immediately after cooking, and the cheese is runny. Letting them rest will allow everything to firm up and cool slightly.

    Ingredients
      

    • 2 English muffins
    • 2 teaspoons full-fat mayonnaise
    • ½ cup Cheddar cheese shredded
    • ½ cup Monterey Jack cheese shredded

    Instructions
     

    • Split each English muffin in half.
    • Spread the outside of each English muffin half with about ½ teaspoon mayonnaise.
    • Pile ¼ cup of Cheddar and ¼ cup Monterey Jack on the bottom half of each bun, then top with the top half, mayo sides facing out.
    • Place the assembled sandwiches in a cast iron skillet or on a griddle set over medium-low heat (or on a grate over hot coals), and cook, flipping once, until the outsides are toasted and golden brown and the cheese is melted, about 5 minutes per side.
    • Slice in half and devour.

    Notes

    • Skip the pre-shredded cheese--Pre-shredded cheese doesn't melt well. Skip the bagged stuff and grate it yourself from a block.
    • Let it rest--Let your sandwich sit for a minute before slicing it. They are quite hot immediately after cooking, and the cheese is runny. Letting them rest will allow everything to firm up and cool slightly.
