    Sweet and Spicy Smoked Nuts

    Perfect for party snacks, gifting, and everyday munchies, these sweet and spicy smoked nuts are easy to make on your smoker or grill. So easy, in fact, you'll probably have them on permanent rotation year round. We certainly do.

    If you try to limit your daily nut intake to "just a handful", it's probably best to not have these lying around. These sweet, salty, spicy, crunchy nuts are so tempting that they'll disappear much faster than you intended! Thankfully, they're great for parties and make a great gift, so you can share the love and avoid over-indulging.

    • Mixed nuts--I like a combination of pecans, cashews, and almonds, but other nuts like walnuts, pistachios, or macadamia nuts would also work well. Be sure to purchase raw, unseasoned nuts.
    • Hot honey--This delivers the sweet and spicy flavor to the roasted nuts. Hot honey is available online and at many stores. If necessary, you can substitute with ¼ cup of honey and ¼ teaspoon red pepper flakes. If you prefer only sweet nuts, you can use regular honey. Use your leftovers to create these amazing recipes that use hot honey.

    How to Make Smoked Nuts

    1. Combine the hot honey, melted butter, and salt in a small bowl. Mix well.
    2. Pour the honey over the nuts and stir to evenly coat the nuts.

    1. Arrange the nuts in an even layer in a foil pan.
    2. Smoke at 225 to 250°F for 1 ¼ hours. Cool completely.

    How long can I store these?

    Store the honey smoked nuts in a sealed container at room temperature for up to 1 week. For longer storage, freeze them for up to 2 months. Thaw at room temperature before enjoying.

    What's the best type of smoke to use for smoking nuts?

    I recommend using hickory or pecan for making smoked nuts. Avoid very strong types of wood, like mesquite or oak, as they can overpower the flavor of the nuts.

    Using Your Grill as a Smoker

    Don't have a traditional smoker? No worries! If your grill has a smoke box on the side, like mine does, pop your wood chips into the box and turn the burner on below it. The heat from the burner and burning chips should be enough to maintain the temperature around 225°F. If it's too low, turn on another burner (but not directly beneath your nuts).

    If your grill doesn't have a smoke box, wrap your wood chips up in foil to create a pouch. Poke holes all over the pouch, then set it directly over the burner.

    Tips and Troubleshooting

    • Let the nuts cool completely in the foil pan before storing. If they stick together, gently break them apart with your hands.

    Equipment

    • Grill or smoker
    • Hickory or pecan wood chips, chunks, or pellets
    • 9 by 13-inch foil pan

    Ingredients
      

    • 4 cups raw mixed nuts
    • ¼ cup hot honey
    • 1 tablespoon butter melted
    • 1 teaspoon table salt

    Instructions
     

    • Prepare a smoker or grill with a smoke box or smoke pouch using hickory or pecan for cooking at 225°F to 250°F.
    • In a small bowl, stir together the hot honey, melted butter, and salt.
    • Place the nuts in a large bowl and pour the honey mixture over it. Use a silicone spatula to stir well, so that each nut is coated.
    • Dump the nuts into a 9-by-13-inch foil pan and spread in a single layer.
    • Place the foil tray on the smoker or grill and smoke at 225°F to 250°F until golden and fragrant, about 1 ¼ hours. Replace wood chips or pellets as needed to maintain a steady stream of smoke.
    • Cool completely before serving.
