    S'more Nachos

    These campfire s'more nachos have all the classic s'more flavors and are the perfect way for everyone to enjoy a campfire dessert without making a mountain of individual s'mores. They're also a great option to make on the grill or in the oven if you don't have access to a fire.

    S'more nachos have been a favorite camping dessert recipe for my kids since they were tiny. I love them because they're an easy dessert that doesn't require any dishes, even the littlest hands can help to assemble them, and everyone can enjoy them without fear of a marshmallow catching fire.

    Why This Recipe is Great for Camping

    • Kids love assembling (and devouring) them.

    Ingredients and Substitutions

    Ingredients for s'more nachos--mini rolo, graham crackers, marshmallows, and chocolate chips.
    • Graham crackers--These form the base of the nachos and are perfect for scooping up the gooey melted chocolate and marshmallow.
    • Marshmallows--Use mini marshmallows for this as they are easier to layer the nachos and evenly distribute throughout the pan. If you only have large marshmallows, cut or tear them into smaller pieces.
    • Rolo pieces and chocolate chips--This adds the chocolate component of the s'mores, but feel free to get creative with your favorite types of chocolate bars and chocolate chips.

    1. Place a layer of graham crackers on the bottom of an 8-inch foil pan. Top with marshmallows, chocolate chips, and Rolo pieces.
    2. Cover the foil pan and place over hot coals on a campfire. Cook until the marshmallows and chocolate are softened and beginning to melt.

    FAQs

    Can I make these on the grill or in the oven?

    Yes. To make them on the grill, prepare your grill for indirect cooking or set it to the lowest possible heat. Place the covered foil pan on the cool side of the grill, cover, and cook until the marshmallows and chocolate begin to melt, 10 to 15 minutes.

    To make them in the oven, preheat the oven to 350°F. Place the uncovered foil pan in the oven and cook until the marshmallows and chocolate begin to melt, 10 to 15 minutes.

    Do I have to use a disposable pan?

    Nope. You can also make these in your cast iron skillet or Dutch oven over the fire. If making them in the Dutch oven, I recommend lining it with parchment paper and using it to remove the nachos before serving to avoid anyone burning themselves on the sides of the pot.

    Tips and Troubleshooting

    • Don't cook over direct flame or you will burn the chocolate. Steady heat from hot coals works best.
    • To double the s'more nachos recipe, use a 9-by-13-inch pan, or two 8-inch square pans.

    Equipment

    • 8-by-8-inch foil pan

    Ingredients
      

    • 12 graham crackers
    • 1 cup mini marshmallows
    • ½ cup mini or regular Rolo pieces
    • ⅓ cup chocolate chips

    Instructions
     

    • Prepare a bed of hot coals in a campfire.
    • Arrange a layer of graham crackers on the bottom of an 8-inch foil pan. Sprinkle the marshmallows, Rolo, and chocolate chips on top. If you don't need all the graham crackers to cover the bottom, you can assemble the nachos in layers.
    • Cover the foil pan and place it over hot coals (not direct flame!). Let it cook until the marshmallows and chocolate are beginning to melt, about 10 minutes. The cooking time will depend on how close your pan is to the heat.
    • Remove from the heat, uncover, and dig in!

    Notes

    • Keep the heat low--Don't cook over direct flame or you will burn the chocolate. Steady heat from hot coals works best.
    • Doubling the recipe--To double the recipe, use a 9-by-13-inch pan, or two 8-inch square pans.
