    Grilled Bacon-Wrapped Steak

    This grilled bacon-wrapped steak is an easy grilled main course that requires only 3 ingredients and is ready in just 20 minutes. It's the perfect dish for simple summer entertaining.

    When summer arrives, I'm all for simple meals that can be prepared and enjoyed outside, which makes this bacon-wrapped steak ideal. In less than 30 minutes you can toss together a quick salad, grab a loaf of crusty bread, and grill these steaks to perfection. Which means more time for you to relax and enjoy your evening.

    You can definitely splurge on tenderloin for this recipe, but the more economical sirloin steak still comes out very juicy and tender (thank you, bacon!) and your wallet will thank you.

    Ingredients and Substitutions

    Ingredients for bacon-wrapped steak--bacon, seasoning, steak.
    • Steak--You can make this with tenderloin or sirloin steak. As the name suggests, tenderloin will be more tender, but more expensive. The steak needs to be about the same thickness as the bacon in order for this recipe to work. If you can't find thick-cut steaks at your market, ask your butcher to cut them for you or purchase a small tenderloin or sirloin roast and slice them yourself.
    • Seasoning--You can use your favorite store-bought or homemade steak seasoning. We use The Keg Steak Seasoning, which is available online and at some grocery stores in Canada, but feel free to swap in your personal favorite. Be generous with the seasoning!
    • Bacon--Use regular cut bacon for this recipe, not thick cut. Thick cut bacon will not be fully cooked when your steaks are done.

    How to Cook Bacon-Wrapped Steak on the Grill

    1. Wrap each steak with one strip of bacon and secure with a toothpick. Season both sides of the steak.

    2. Cook the steak over medium-high heat until the bacon is crisped and the meat has reached your desired level of doneness.

    FAQs

    How do I avoid flare-ups when cooking my steak?

    The fat dripping from the bacon is likely to cause some amount of flaring, but you can minimize it by placing the steaks between lit burners on the grill grate so that they're not directly above the flame.

    How will I know when it's done?

    Since this steak is very thick, the best way to determine doneness is with an instant read thermometer. To check, stick it into the thickest part of the steak. For medium-rare beef, it's ready when the temperature reads 130°F (54°C) but if you prefer medium doneness, let it cook until the thermometer reads 140°F (60°C).

    What should I serve with this?

    For a light and easy grilled dinner, serve this bacon-wrapped steak with grilled panzanella. For something a bit heartier, try it with cheesy foil packet potatoes and Blackstone asparagus.

    Tips and Troubleshooting

    • If your bacon isn't as crispy as you like, use a pair of long-handled tongs to hold the sides of the meat wrapped in bacon directly against the heat for about 30 seconds.
    • This recipe is suitable for gluten-free and dairy-free diets.

    Ingredients
      

    • 4 slices regular (not thick) cut bacon
    • 4 1½-to-2-inch (4-to-5-cm) thick sirloin or tenderloin steaks (about 6 oz | 170 g each)
    • 4 teaspoons Homemade or store-bought steak seasoning

    Instructions
     

    • Preheat the grill for medium-high heat (425 to 450°F | 218 to 232°C).
    • Wrap one strip of bacon around the side of each steak, securing the two ends together with a toothpick. Season both sides of the steak generously with steak seasoning.
    • Cook the steaks on the preheated grill, flipping once, until they reach the desired doneness, about 6 minutes per side for medium rare (130°F | 54°C).

    Notes
