    Blackstone Asparagus

    Made with just four ingredients and ready in less than 10 minutes, this Blackstone asparagus is the easiest spring side dish to make on your outdoor griddle.

    Asparagus is, without question, my favorite vegetable. During its brief spring season, I eat it tossed into potato salad, roasted, grilled, and even shaved raw into salads. Lately, I'm loving it cooked on the Blackstone griddle. It's so easy to cook alongside whatever protein we're having, and it takes less than 10 minutes to make.

    Ingredients and Substitutions

    Ingredients for Blackstone asparagus--asparagus, lemon, oil, and all purpose seasoning.
    • Asparagus--I prefer the thin stalks of asparagus as they are the most tender and cook quickly. If you only have the thicker stalks, they'll work, but they will take longer to cook. Look for bright green stalks with firm, closed tips. Avoid any asparagus that is wilted or has mushy tips. Snap or cut off the woody bottom inch of the asparagus spears before cooking.
    • Oil--I prefer olive oil for this recipe, but any neutral vegetable oil will work.
    • All-purpose seasoning--This homemade seasoning blend adds a subtle lemon pepper flavor to the asparagus. If your lemon pepper doesn't have salt in it, you'll need to season the asparagus lightly with salt before cooking.

    How to Cook Asparagus on the Blackstone

    1. Toss the asparagus with 2 teaspoons oil and the seasoning.

    2. Cook the asparagus on a griddle over medium heat, stirring often, until crisp-tender.

    FAQs

    Can I make this in a cast iron skillet?

    Yes. You will need to use your largest skillet and I recommend trimming the asparagus so that it fits in a single layer in the skillet. You want the asparagus to have direct contact with the surface of the skillet, so you may have to cook it in two batches.

    Follow the directions, cooking over medium heat, and turning often, just until the asparagus is crisp-tender.

    Serve this easy griddle asparagus recipe with a simple protein that can be cooked alongside it, like garlic butter shrimp skewers or Blackstone steak bites.

    Ingredients
      

    • 12 ounces (340 g) asparagus woody ends removed
    • 4 teaspoons olive oil divided
    • 1 teaspoon all-purpose seasoning blend
    • Lemon wedges for serving

    Instructions
     

    • Arrange the asparagus on a small rimmed baking sheet. Drizzle with 2 teaspoons oil and sprinkle the seasoning blend over. Toss to combine.
    • Heat the Blackstone or other outdoor griddle to medium. Brush the remaining 2 teaspoons oil on the surface of the griddle.
    • Add the asparagus to the hot griddle in a single layer and cook, stirring frequently, until it's bright green and crisp tender, 3 to 4 minutes.
    • Serve hot, with lemon wedges for squeezing over.
