Why You'll Love This Recipe
- Cooking shrimp on the griddle means that they soak up the garlic butter with no flare-ups that you'd get on a grill.
- It's a quick and easy skewer recipe that's ready in just 20 minutes!
Ingredients and Substitutions
- Shrimp--Use jumbo shrimp (16/20 count) or larger. Smaller shrimp will be difficult to thread onto skewers. You can use fresh or frozen shrimp, but frozen shrimp need to be thawed before cooking.
- Butter--I use salted butter and skip salting the shrimp, but if you are using unsalted butter, add a big pinch of salt to your melted garlic butter mixture before brushing it on the shrimp kabobs.
How to Cook Shrimp on a Blackstone Griddle
- Melt the butter in a saucepan over medium-low heat.
- Stir in the garlic and cook for 30 seconds. Remove from the heat and divide the garlic butter between two small bowls.
- Thread the shrimp onto skewers.
- Place the shrimp skewers on a griddle over medium heat and brush with garlic butter from one bowl. Cook until they're beginning to turn pink, flip, and brush with more garlic butter. Serve with the extra butter, lemon wedges, and parsley.
FAQs
As the shrimp cook, they'll change from grey in color to a bright pink. They will also become slightly firm. You'll know that they're ready when they are pink, opaque, and firm to the touch when pressed. Take care not to overcook them though, as they become tough and rubbery.
Place your shrimp in a sealed bag, fill a large bowl with cold water and submerge the bag in the bowl. Place a plate or heavy object on top to keep it submerged. They'll be thawed in about 20 minutes.
Whip up an easy salad, like coleslaw or potato salad with asparagus, and throw down a loaf of good crusty bread for sopping up all that extra garlic butter. You'll have an impressive seafood meal with barely any effort.
Tips and Troubleshooting
- Some types of skewers may prevent all of the shrimp from having direct contact with the surface of the griddle. If the shrimp don't have direct contact with the griddle surface while they're cooking, press on them gently.
