These garlic butter shrimp skewers are quickly cooked on your griddle until sweet and buttery. They're an easy camping or weeknight meal that's ready in just 20 minutes.
In a small saucepan over medium-low heat, melt the butter. Stir in the garlic and cook for 30 seconds.
Remove from the heat and divide the garlic butter between two small bowls. Reserve one bowl for serving.
Thread the shrimp onto skewers.
Heat a griddle to medium. Coat with cooking spray or brush lightly with oil.
Lay the skewers on the griddle with a little space between each one. Brush the exposed side with garlic butter.
Cook until the shrimp are beginning to turn pink on the bottom, 2 to 3 minutes. Flip and brush with more butter. Cook until they are pink and opaque throughout, about 2 minutes more.
Transfer to a serving platter, drizzle with the reserved butter, and sprinkle with parsley. Serve with lemon wedges.
Notes
Some types of skewers may prevent all of the shrimp from having direct contact with the surface of the griddle. If the shrimp don't have direct contact with the griddle surface while they're cooking, press on them gently.
