    This hash brown avocado toast is a crispy handheld breakfast flavor bomb that is perfect for at home or at camp. Crispy hash brown patties are topped with creamy avocado, everything bagel spice, and a drizzle of hot sauce, if you like, for an easy breakfast that's ready in less than 20 minutes.

    A few months ago, I meandered into the kitchen while my daughter was preparing breakfast. I watched, fascinated, as she painstakingly layered perfect slices of avocado onto crispy hash browns, then sprinkled everything bagel spice with perfect precision and oh-so-carefully drizzled hot sauce over the top. It was a masterpiece, almost too good to eat. Almost.

    While I was a little disappointed that she didn't want to share that day, I knew this recipe was going to be an everyday AND camping breakfast staple. And it is. Those frozen hash brown patties crisp up beautifully on your griddle or in your cast-iron skillet (but if you're a rule-follower, you can just make them in the oven like the package says), and the creamy avocado and savory spice blend complement them perfectly.     • Avocado--Choose dark colored avocados that give slightly when squeezed. Avoid hard bright green (underripe) or mushy avocados (overripe). Use extra avocado to make 3-ingredient guacamole.
    • Everything bagel seasoning--This is a combination of dried onion, dried garlic, sesame seeds, and other spices. There are several pre-made varieties available at the supermarket and online, or you can make your own.

    1. Fry the hash brown patties on a seasoned griddle or cast-iron skillet until crispy and browned, flipping once during cooking.
    2. Top with sliced avocado, a sprinkle of everything bagel seasoning, and a drizzle of hot sauce, if desired.

    FAQs

    Can I make this in my oven?

    Yes. If you don't want to cook your hash browns on the stovetop or on your griddle, follow the oven directions on the package and proceed with the recipe once they're cooked.

    How do I know when my hash browns are done?

    The hash browns will be darkened and crispy (but not burnt) on the outside, and should be releasing some oil. You should be able to cut through them easily and the center should be hot.

    Tips and Troubleshooting

    • There is one caveat to this recipe if you're making it while camping. You do need access to a freezer to keep the hash browns frozen until you're ready to cook, so it is best suited to trailers, rvs, and motorhomes that have a freezer.

    Ingredients
      

    • 2 frozen hash brown patties
    • ½ avocado sliced
    • ¼ teaspoon everything bagel seasoning
    • Hot sauce optional

    Instructions
     

    • Heat a griddle to medium or set a cast iron skillet over medium heat.
    • Cook the hash browns, flipping once, until both sides are golden brown and crispy and the center is soft and hot, about 5 minutes per side.
    • Transfer the hash browns to a plate. Top with sliced avocado, everything bagel seasoning, and hot sauce, if desired. Serve immediately.

      I made the Hashbrown Avocado Toast for breakfast. To get my protein in, I topped it with a sunny-side up egg. Delicious.
