    The quintessential French Canadian snack gets an indulgent breakfast makeover with the addition of crispy bacon, onion, and rich Hollandaise sauce.

    If you're familiar with poutine, the beloved French Canadian snack of French fries and cheese curds doused in gravy, then you'll love this breakfast interpretation, made with hash browns, bacon, onion, cheese curds, and Hollandaise sauce. Cooking it on your Blackstone or outdoor griddle allows you to prepare this indulgent breakfast in just 20 minutes.

    Ingredients and Substitutions

    • Hash browns--I use frozen diced hash browns for this recipe because they cook quickly. See the FAQ section below for how to substitute fresh potatoes.
    • Bacon--I recommend using regular thin-sliced bacon for this recipe. You can use thick-cut bacon, but it may take longer to cook.
    • Cheese curds--These are widely available in the cheese section of grocery stores in Canada and throughout the Midwest. If you have difficulty locating them, check with your local cheese shop, or you can order cheese curds online. They also make a great snack!
    • Hollandaise sauce--Feel free to use your favorite homemade Hollandaise sauce recipe, or prepare it from a packet, which is widely available at grocery stores.
    • Seasoned salt--This adds a little extra flavor to your breakfast. I like Lawry's Seasoned Salt best, but feel free to use your favorite. You can also use plain table salt here, if you prefer.

    How to Make Breakfast Poutine with Hollandaise Sauce

    1. Cook the hash browns on one side of the griddle.

    2. Cook the bacon and onion on the other side of the griddle.

    3. Mix the potatoes, onion, and bacon together and season.

    4. Add cheese curds and serve with Hollandaise sauce.

    FAQs

    Can I make this with fresh potatoes?

    Yes, you can make it using diced fresh potatoes, however, start cooking the potatoes a few minutes before the onion and bacon as they'll take longer to cook than frozen diced hash browns.

    Can I add extra protein to my breakfast poutine?

    Definitely. Feel free to add in some ground sausage or chopped sausage links, or leftover Dutch oven meatloaf or turkey sausage patties to the bacon and onion mixture, or top your poutine with a fried, poached, or scrambled eggs.

    Tips and Troubleshooting

    • Adjust the heat as needed while cooking your potatoes, bacon, and onion to avoid burning the onion and bacon.
    • If the potatoes are finished cooking before the bacon and onion, or vice-versa, simply turn off that side of the griddle. Once everything is ready, heat it back up.
    • This breakfast poutine recipe is suitable for gluten-free diets. Be sure to check your Hollandaise sauce to make sure it is gluten-free as some commercial varieties contain gluten.

    Equipment

    • Blackstone (or other outdoor) griddle

    Ingredients
      

    • 2 tablespoons vegetable oil
    • 2 cups diced frozen hash browns
    • 4 slices bacon cut crosswise into ½-inch pieces
    • ½ medium onion diced
    • ⅛ teaspoon seasoned salt
    • ½ cup cheese curds
    • ½ cup Hollandaise sauce

    Instructions
     

    • Heat one side of the griddle to medium, and pour the oil over it. Heat the other side to medium-low.
    • To the side with the oil, add the hash browns, and spread them in an even layer. Cook, stirring occasionally, until browned and cooked through, about 10 minutes.
    • Place the bacon and onion on the other side of the griddle, and cook, stirring occasionally, until the bacon is crisped and the onion is soft, about 10 minutes.
    • Stir the bacon and onion mixture into the hash browns and season with the salt.
    • Turn off the heat and add the cheese curds to the hash.
    • Divide the mixture between two bowls and top with Hollandaise sauce. Serve immediately.

    Notes

    • Monitor your heat--Adjust the heat as needed while cooking your potatoes, bacon, and onion to avoid burning the onion and bacon.
    • Avoid overcooking--If the potatoes are finished cooking before the bacon and onion, or vice-versa, simply turn off that side of the griddle. Once everything is ready, heat it back up.
