Classic poutine gets a breakfast makeover with the addition of bacon, onion, and Hollandaise sauce.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 2 cups diced frozen hash browns
  • 4 slices bacon cut crosswise into ½-inch pieces
  • ½ medium onion diced
  • teaspoon seasoned salt
  • ½ cup cheese curds
  • ½ cup Hollandaise sauce

Instructions
 

  • Heat one side of the griddle to medium, and pour the oil over it. Heat the other side to medium-low.
  • To the side with the oil, add the hash browns, and spread them in an even layer. Cook, stirring occasionally, until browned and cooked through, about 10 minutes.
  • Place the bacon and onion on the other side of the griddle, and cook, stirring occasionally, until the bacon is crisped and the onion is soft, about 10 minutes.
  • Stir the bacon and onion mixture into the hash browns and season with the salt.
  • Turn off the heat and add the cheese curds to the hash.
  • Divide the mixture between two bowls and top with Hollandaise sauce. Serve immediately.

Notes

  • Monitor your heat--Adjust the heat as needed while cooking your potatoes, bacon, and onion to avoid burning the onion and bacon.
  • Avoid overcooking--If the potatoes are finished cooking before the bacon and onion, or vice-versa, simply turn off that side of the griddle. Once everything is ready, heat it back up.
  • Dietary--This breakfast poutine recipe is suitable for gluten-free diets. Be sure to check your Hollandaise sauce to make sure it is gluten-free as some commercial varieties contain gluten.
