Heat one side of the griddle to medium, and pour the oil over it. Heat the other side to medium-low.
To the side with the oil, add the hash browns, and spread them in an even layer. Cook, stirring occasionally, until browned and cooked through, about 10 minutes.
Place the bacon and onion on the other side of the griddle, and cook, stirring occasionally, until the bacon is crisped and the onion is soft, about 10 minutes.
Stir the bacon and onion mixture into the hash browns and season with the salt.
Turn off the heat and add the cheese curds to the hash.
Divide the mixture between two bowls and top with Hollandaise sauce. Serve immediately.
Notes
Monitor your heat--Adjust the heat as needed while cooking your potatoes, bacon, and onion to avoid burning the onion and bacon.
Avoid overcooking--If the potatoes are finished cooking before the bacon and onion, or vice-versa, simply turn off that side of the griddle. Once everything is ready, heat it back up.
