Ingredients

  • Hot water
  • 1 box (4.2 oz | 120 g) box dehydrated shredded hash browns
  • 1 large egg beaten
  • 2 tablespoons all-purpose flour
  • Salt and freshly ground black pepper
  • Cooking spray

Instructions

  • Prepare a campfire. You want a hot campfire with medium flames for cooking these patties.
  • While the fire is getting established, add hot water to the box of hash browns and let them soak, according to package directions.
  • In a medium bowl, combine the hydrated hash browns, egg, and flour. Season with salt and pepper and mix well.
  • Spray your pie iron well with cooking spray. Mound about ⅓ of the potato mixture onto one side of the cooker. You want it to be full, but still be able to close the pie iron. Top with the other half of the pie iron.
  • Cook the hash brown patties over the fire, flipping once or twice, until the potatoes are golden brown and crispy, 7 to 10 minutes per side.
  • Open the pie iron and use the edge of a knife to gently remove the hash browns and transfer to a plate. Repeat with the remaining mixture. spraying the pie iron well for each patty.

Notes

  • Spray the inside of the pie iron really well with cooking spray to avoid any sticking.
  • Tuck any stray potato bits into the pie iron before closing. Any pieces of potato that are sticking out will burn. If you end up with burned bits, just cut them away after removing the patty from the pie iron.
  • Cook your hash brown patties over a hot fire with medium flames. Low flame or hot embers will require a longer cooking time.
  • These do take some time to cook. If you have access to a double pie iron, use that in order to cook more at the same time.
