Equipment

Ingredients

  • 3 medium peaches peeled and diced (about 2 cups or 1 lb)
  • ½ serrano pepper seeded and diced
  • ½ cup light brown sugar
  • ¼ cup apple cider vinegar
  • 3 tablespoons bourbon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ¼ teaspoon salt

Instructions

  • Combine all of the ingredients in a medium saucepan.
  • Bring to a simmer over medium heat. Reduce heat to medium low and simmer until the peaches are very soft, about 15 minutes.
  • Carefully transfer the contents of the saucepan to a high speed blender. Blitz until smooth.
  • Transfer the sauce to a sealed container or jar and cool completely before refrigerating. Use within 2 weeks or freeze for longer storage.

Notes

  • Adjust the consistency--If your sauce is too thick after blending, drizzle in a little water until it reaches your desired consistency. If it's too thin, simmer it over medium-low heat until it reduces and thickens.
  • Dietary--This recipe is suitable for dairy-free diets.
