Ingredients
  

  • 4 pound (1.8 kg) sirloin tip roast
  • cup BBQ rub for beef store-bought or homemade

Instructions
 

  • Set up your grill for rotisserie cooking and preheat the grill to 400°F (200°C).
  • Rub the roast all over with the bbq rub.
  • Thread the roast onto the rotisserie and attach it to the motor. Cook until the internal temperature reaches 130°F (54°C) for medium rare, about 1 hour. (If your roast is larger or smaller, cook for about 15 minutes per pound.)
  • Remove from the grill and let rest for 10 minutes before removing the rotisserie prongs and skewer. Thinly slice against the grain.

Notes

  • Let it rest--Let your meat rest for at least 10 minutes after cooking before you slice. This will help the juices to redistribute throughout the roast, ensuring juicy, tender slices.
  • No rotisserie?--Follow the instructions, cooking the roast over low direct heat, rotating it 90 degrees every 15 minutes.
  • Dietary--This recipe is suitable for gluten-free and dairy-free diets.
