Grilled Avocado and Tomato Salad

Take your salad game up a notch by grilling your avocado, tomato, and scallions before tossing them with easy lime dressing and finishing the whole salad with crunchy spiced pepitas. You'll never look at salad the same way again.

Ingredients
  

  • Cooking spray
  • 2 large tomatoes quartered
  • 1 large avocado halved
  • 4 scallions (green onions)
  • 2 tablespoons olive oil divided
  • Salt and freshly ground black pepper
  • Zest and juice of 1 lime
  • ¼ cup spiced pepitas

Instructions
 

  • Preheat grill to medium (400°F). Coat a grill rack with cooking spray.
  • Place the avocado halves, tomatoes, and scallions on the grill rack. Brush with 1 tablespoon oil and season with salt and pepper. Flip the avocado halves so they are flesh side down.
  • Grill until tender and slightly charred, about 2 minutes per side for the scallions, 5 to 6 minutes for the avocado, and about 5 minutes per side for the tomatoes. Transfer them to a bowl to cool as they finish cooking.
  • Cool slightly then chop the tomatoes and scallions into large chunks. Slice each avocado half.
  • Whisk the lime zest and juice with the remaining 1 tablespoon oil in a small bowl. Season with salt and pepper.
  • Pour the dressing over the salad and mix gently to combine. Serve immediately.

Notes

  • Use a grill rack--This will help you avoid having the scallions or tomatoes slip through the grill.
  • Dietary--This recipe is suitable for gluten-free, dairy-free, and vegan diets.
