Recipe at a Glance: Apple Pie Quesadilla
- DETAILS
- Total Time: 20 minutes
- Preparation method: Blackstone or skillet
- HIGHLIGHTS
- This apple pie quesadilla is an easy dessert quesadilla recipe made with spiced apples and butterscotch in a toasted tortilla. It tastes just like apple pie and is ready in just 20 minutes.
- It's designed to be cooked on your Blackstone or outdoor griddle, but you can also cook it in a skillet on your stovetop.
I'm incredibly excited about these apple pie quesadillas for a few reasons. First, it's pretty rare to find a dessert recipe that you can make on the Blackstone, and second, quesadilla recipes tend to be limited to savory options. They definitely make a great go-to lunch or dinner and are a fantastic way to use up whatever might be lingering in your fridge but we often don't think of them beyond a simple main course.
It turns out that they make a great dessert (or snack) option, and this apple pie version is proof. Loaded with tender spiced apples and creamy caramel or butterscotch sauce, they require only a handful of ingredients, but taste just like apple pie. You can make them on your outdoor griddle or in a skillet.

Ingredients and Substitutions

- Apple--Use a good baking apple that will hold its shape and won't become mushy. Honey Crisp, Cosmic Crisp, or Pink Lady are good options. If you prefer a more tart apple flavor, use a Granny Smith.
- Tortilla--Use a large burrito-size tortilla for this recipe. Anything smaller won't hold all the apple slices.
- Apple pie spice--You can purchase apple pie spice online or at supermarkets, or you can make you own by combining 3 tablespoons cinnamon, 1 teaspoon ground ginger, and ½ teaspoon ground nutmeg.
- Butterscotch--You can use store-bought or homemade butterscotch or caramel sauce. Either will work well here.
How to Make Apple Pie Quesadillas on the Blackstone

1. Melt the butter over medium heat.

2. Add the apples to the butterand sauté until almost tender. Sprinkle with the apple pie spice and cook for 30 seconds more.

3. Spread the butterscotch on the tortilla. Mound the apples on one half of the tortilla.

4. Fold the tortilla over and cook, flipping once until slightly crisped.
Making Your Quesadilla in a Skillet
You can also make this in a cast iron skillet or non-stick skillet on your stovetop, however, you will only be able to make one quesadilla at a time. Don't try to cook more than one apple at a time in a single skillet or they will steam and cook unevenly.
Tips and Troubleshooting
- Let your quesadilla cool for 5 minutes before slicing. It will be hot, and the cooling time will also help everything to stick together.
- For easy slicing, use a pizza cutter!
- These can be a little messy to eat, so have a napkin handy.

Apple Pie Quesadilla
Equipment
- Blackstone (or other outdoor) griddle (or skillet)
Ingredients
- 1 tablespoon butter
- 1 medium apple peeled and sliced ¼-inch (6-mm) thick
- ½ teaspoon apple pie spice
- 2 tablespoons butterscotch sauce (or substitute caramel)
- 1 large flour tortilla
Instructions
- Heat the Blackstone to medium (or set a large skillet over medium heat).
- Add the butter and let it melt.
- Arrange the apple slices in a single layer and cook, stirring and flipping occasionally until they are just softened, about 7 minutes.
- Sprinkle with apple pie spice and cook 30 seconds longer. Move the apple slices to a cool part of the griddle. If using a skillet, transfer them to a bowl.
- Spread the butterscotch sauce all over one side of the tortilla. This acts as the "glue".
- Mound the apples on one half of the tortilla. Fold it over to create a half-moon shape.
- Cook over medium heat, flipping once, until the tortilla is golden brown and beginning to crisp, about 2 minutes per side.
- Remove from the heat and let cool for 5 minutes before slicing.
Notes
- Let it cool--Let your quesadilla cool for 5 minutes before slicing. It will be hot, and the cooling time will also help everything to stick together.
- Slicing your quesadilla--For easy slicing, use a pizza cutter!
- Don't forget the napkins--These can be a little messy to eat, so have a napkin handy.
