These easy 5-ingredient chicken and veggie foil packs are a healthy meal that's filled with tender boneless chicken thighs, peppers, and onions, all gently infused with Cajun seasoning.
1 ½poundsboneless, skinless chicken thighscut into bite-size pieces
1bell peppersliced
1mediumred onioncut into wedges
3tablespoonsolive oil
2tablespoonsCajun seasoning
Instructions
Preheat the grill for medium heat (375°F) or prepare a campfire with hot coals.
Combine the chicken, pepper, onion, olive oil, and Cajun seasoning in a large bowl and mix well to combine.
Divide the chicken mixture among 4 large sheets of heavy duty aluminum foil. Fold the foil around the food to create foil packets.
Cook over the grill or hot coals until the chicken is cooked through and the vegetables are tender, 18 to 20 minutes.
Notes
Get ahead--Slice your veggies and cube your chicken before heading out on your trip. Store the meat and vegetables separately, then assemble them at camp, just before cooking.
Check for salt--Take a peek at the label on your Cajun seasoning. If it doesn't contain salt, or it's the last ingredient on the list, sprinkle the uncooked mixture with a few pinches of salt before cooking.
Don't burn yourself!--Be careful when opening the foil packs as there will be plenty of hot steam trapped inside.
